Dinning in YongAn Jellied Rice Cubes
It is processed by the following steps: rice is steeped into the water and ground into the rice milk first; then little edible alkali is added into the thin rice milk which is like the paste and churned in the hot pot; after that, the thin milk is put through the mesh screen into the bucket or basin that contains water, producing lots of little rice cubes as large as the bees, when you can take them out and cook with other condiments, such as shallot, mushroom, pork, little shrimps and so on.
Rice Dumpling
The steps for making rice dumpling are the same as Jellied Rice Cubes, i.e. rice is steeped into the water and ground into the rice milk, and then adding little edible alkali into the milk and churning it in the hot pot until it looks like thick paste. Afterwards, it will be made into the round dumplings manually in 2-4 cm diameter. Put them into the bamboo basket with herbs and steam, then you can enjoy it.
Stewed Bean Curd
It is one of the most well-known delicacies in Yong’an, made by mass bean curd with cuttlefish, pig’s knuckle, spare ribs and water in a big iron wok and stewed by charcoal fire. After a while, the bean curd will look like a honeycomb when you can adjust the flavor; after it is all cooked, you can eat a little piece of beau curd dipped with the seasoning made by sauce, garlic and sugar candy…… It is so fragrant and sweet that you will like it surely!
Great Lake Fish
Great Lake Fish is a renowned local specialty in Yong’an and a welcomed dish in the local banquets as well, enjoying the reputation just as famous as the Bean Curd produced in Qiaowei of Yong’an. It was recorded that the ancestor of Great Lake Lai Family was emigrated from Jiangxi Province, so they were familiar with the fish-cultivating skills handed from generations lived in Jiangxi. Due to the exclusive cool fresh water in Great Lake, which was very suitable for developing the fishing industry, every year the local residents purchased young fish of grass carp from Jiangxi Province and fed them. Thus from one generation to another, Great Lake has been become the well-known “Home of Fishing Industry” gradually.
Red Mushroom
Shape like a dishware and in the color of bright red, the Red Mushroom not only contains rich nourishment including high content of protein and various vitamins, but also tastes delicious, well-known as the condiment or the cooking material. Furthermore, it can be used as the medicine with the function of clearing away the toxics and nourishing the vitality. However, even up to the present the Red Mushroom can not be cultivated artificially due to its un-separated mycelium. As a result it becomes more and more precious, and is a top-grade gift for friends and relatives. The most famous producing area for Red Mushroom in Yong’an is Hongtian Town because of the high-yielding and high-quality.
Jishan Old Wine in Yong’an has a long history and is unique in its brewing technology and thick fragrance, delicious taste, clear and gorgeous red color. It is low in alcohol content, containing several kinds of nourishment components, such as glucose and aldehyde, which is good for the health of stomach and the extending of life. So it is highly appraised by the public and sold well in many other areas.

It is also called “Fujian Bamboo Shoots”, “Tribute Bamboo Shoots” or “White Bamboo Shoots”, enjoying the high reputation throughout the home and abroad. It is made of the high-quality local fresh bamboo shoots, featured in its thickness, yellow color, tender and good taste, being outstanding in bamboo shoots products.
